Primal Blueprint Recipe: Kiss My Shrimp ‘n Grits

Kiss My Shrimp n’ Grits

Kiss My Shrimp n’ Grits

2 lbs raw shrimp w/ heads (can use without if unavailable)
5 bacon slices (nitrate/nitrite free)
1 (8 oz.) package fresh mushrooms
3 garlic cloves, minced
1 medium onion, chopped
14 oz fresh shrimp stock (can subs chicken)
½ tsp sea salt
¼ tsp cayenne pepper
1/3 cup raw cream (can subs coconut milk)
¼ cup green onions, chopped

Remove heads, shells and tails from shrimp and reserve for stock. Cook bacon until crisp in a medium skillet for 8 to 10 min or until crisp. Remove bacon, drain on paper towels, reserving drippings in skillet.

Saute` onions, garlic and mushrooms in hot drippings until tender and mushrooms begin to release their liquid. Stir in shrimp or chicken stock, sea salt and pepper. Bring to a light boil over medium high heat; reduce to medium and simmer 10 to 15 minutes or until slightly thickened.

Stir in shrimp and green onions and cook, stirring occasionally, 3 minutes or just until shrimp turn pink. Remove from heat; stir in raw cream or coconut milk.

To serve: place a generous helping of “grits” on a plate, several spoonfuls of shrimp mixture along with plenty of sauce.

“Primal Grits”

1 head cauliflower, broken into flowerets
Sea salt to taste
1 – 2 tbs raw butter (optional)

Place about 1 ½” stock or water in a steamer. Add flowerets and steam for approximately 15 min or until tender. Drain; add sea salt to taste and raw butter if desired and mash. I use a hand potato masher.

ABC Action News features Victor from CrossFit Jaguar, 5/7/2011

TAMPA – Every Saturday, Ellen McNamara features an amateur athlete from the Bay area.

This weekend, she introduces you to a man who used to be obese, but now is a lean machine.

“I would say, I was probably real misearable,” Victor Amuso said. “No energy for my kids, no energy for my wife, and when I was done working, I’d sit on the couch and go to sleep.”

At 296 lbs, Victor Amuso was obese. His back hurt, his legs hurt, and he would eat just to eat.

“You need to eat to live, not live to eat, and I was definitely one of those live to eaters,” Amuso said.

After a trip with his family, he hit rock bottom.

“We just decided let’s do something together,” Amuso said. “So we found a place that was close to our house and we basically started coming in.”

Then his gym offered a challenge. Amuso signed up. Besides working out, he changed the way he ate.

“When you start tracking what you’re eating you realize this is adding up,” Amuso said. “Something I thought was good, I was really eating 3,000 to 4,000 calories a day.”

In about three and a half months, he went from 296.5 lbs to 239 lbs. A total of 57.5 pounds lost.

“I look today, (at a picture of himself) and it represents exactly how I feel,” Amuso said. “I look better, it’s not exactly where I want to be, it’s a process, a lifestyle, and I realize that once I hit my goal weight it’s not where it ends.”

Cross Fit has empowered Amuso, and the lean machine hopes to compete on a national stage soon. He also says anyone who truly wants to make a change, can!

“You come in, you make it a part of your life, and it won’t take long,” Amuso said.

ABC Action News: Meet two moms that burn calories flipping tires

ABC Action News features Danielle and Amy from CrossFit Jaguar

TAMPA – Every Saturday, Ellen McNamara features an amateur athlete, or athletes from the area. The athlete does not have to be a superstar, just someone that gets out and works hard.

This week, two moms that do unconventional things to burn calories are being honored.

Flipping tires is just one unconventional way Amy Cazin and Danielle McClendon stay in shape.

Both moms say exercise is like therapy.

“Exercise has always been an essential part of my life,” McClendon said. “It’s like my Prozac. “I definitely think it relieves a ton of stress.”

Cazin has run a number of marathons, but says Cross Fit has taken her fitness to a new level.

The women work out in a parking lot, in the gym, they will run, jump rope, and even swing around a sledgehammer.

The moms also include their kids.

“We do some of this at home, it definitely got them excited about fitness and working out,” McClendon said.

Though McClendon tapped into Cross Fit a little later in life, she and Cazin say they are proud to be athletes.

“I wish I had tapped into this a little bit earlier in my life,” McClendon said. “I have been called an athlete in recent years and it’s a label I accept.”
